Key Lime Avocado Popsicles

Happy Friday, friends! I hope you’re enjoying whatever you needed most of this week, from relaxation to productivity. And, I hope you’re making the most of the season…whatever that means right now.

Seasons blur at back-to-school time, and that’s what this week was for us. Wednesday was Chef F’s first day, and man did my heart ache. He's a 3rd grader now, and I STILL get pangs every time I drop him off at school. Alongside the tenderly tugging emotions, though, is a tangle of conflicting ones. Gratitude, for easier structure for fitting in work time and errands. Guilt for the gratitude. I need the time, but I miss my sweet boy, and lingering in languid summer days with him.

This week, I picked up a pretty solid “cure” for all the emotional push-pull, and it is the simplest life lesson we remind ourselves of on the regular. It all comes back to living in the now. I’m not talking about freeing ourselves of all less-than-fulfilling occupations, although if that’s an option I’m all for it. I just mean, it helps to put extra conscious effort into being present, and seeing that present for what it is. The longings for my little boy, for instance, are wrapped up in wistfulness reflecting on both a younger him and me. Looking at him and truly seeing the flourishing young man he is becoming brings forth an ache, too, but with a suble difference that has a touch of added comfort.

Back-to-school always has that close of a chapter feeling, and ushers in fall, but it's just mid August! This year, while I'll be ready to embrace autumn when it's truly here, I'm deciding to eke the most out of summer while we still can--meaning swimming, nurturing carefree "off" hours, and popsicles. These creamy key lime pops are richly refreshing, so easy to make, and burst with indulgent flavor and packed with wholesome goodness. They’re one of a growing list of ways F enjoys avocado, which feels like a double win.

Vegan Avocado Key Lime Popsicles


3 -4 popsicles depending on your mold

1 medium avocado, peeled and pitted
1 banana
1 Cup coconut milk (full fat, light, or coconut cream, depending on how decadent you’re feeling)
2 Tablespoons date syrup
Juice and zest of 1 small lime

Blend all ingredients until creamy. Pour into popsicle molds. Freeze and enjoy!
