Rainbow Chia Parfait

Happy spring, friends!

Just the idea of “spring” brings on such lovely, lilting feelings of optimism, doesn't it? Plus, thoughts of young buds, baby lambs, robins, bunnies...and of course rainbows!

Everyone knows the golden power of “eating the rainbow”. These delightful, power-packed parfaits are the epitome of that, and magical, too. Chia seeds take the concept of good things in small packages to a whole new universe, loaded as they are with antioxidants, minerals, fiber, and the ever alluring omega-3 fatty acids. Have fun with your children, and embrace your inner child: play with layers of colorful flavor by blending in fresh fruit puree.

I’m listing some favorite fruit blends, but there’s a rainbow of endless possibilities out there, so enjoy experimenting! Whether you use a lightly sweetened plant milk as your base or an unsweetened one, luscious, ripe fruit shines as beautifully with Unsweetened options. Rainbow chia pudding parfaits
Yield: 6-8 servings

For each layer, you will need:
1 Cup Good Karma Unsweetened or Original Plant Milk 
3 Tablespoons chia seeds
Fruit puree (see list below)
Fresh fruit, mint leaves serve, optional

For each colored layer, puree fruit and Good Karma plant milk in a blender. Transfer to a container with a lid and add chia seeds, stirring or whisking to evenly distribute. Refrigerate 4 hours or overnight.

To assemble parfaits, layer alternating colors in glasses and top with fresh fruit and/or garnish of choice.

Fruit puree blends:

Red: ¾ Cup strawberries, raspberries, or a mix plus 1-2 tablespoons chopped red beetroot

Orange: 1 small mango about a cup peeled and chopped) plus a few strawberries or 1 small chunk beetroot (about ½ teaspoon)

Yellow: 1 Cup chopped mango, pineapple, or a mix

Green: 2 small green kiwis, peeled and chopped, a handful of spinach (approximately ⅓ Cup), ½ a small banana

Blue: 1 Cup blueberries

Purple: 1 Cup mix of blackberries, raspberries and/or ch
