Berryliscious beet and chia parfait

I know, two posts in one day? The truth is, my candle is down to the waxy bubbles, spreading and cooling and ready to crack. In other words, I need to shut down, read a book, or at least chill on the couch with my husband and some Olympics. On the other hand, it’s February 11, and you know I can’t resist the opportunity to jump on the train sharing treats that make your heart “beet” happy!

The vibrant color and swirls of this creamy and luscious parfait are enough to delight the whole fam— no processed sugar needed. Low in calories but loaded with nutrients, beetroot is so versatile–cooked, raw, as the star or the enhancement. Paired with strawberries and banana, the sweetness couldn’t be more satisfying. Plus, the texture of the chia pudding complements and highlights the refreshment of the smoothie all the more. That’s all, dears! Have a lovely weekend! More soon. xo

Berry-beet and chia parfait
2 servings

For the chia pudding:
3 Tablespoons chia seeds
1 Cup plant milk of choice
½ Teaspoon vanilla extract
1 Tablespoon maple syrup, agave, or other sweetener (optional)

For the beet-berry smoothie:
1 small red beet, chopped
1 Cup fresh or frozen strawberries
1 banana, sliced and frozen
2-3 ice cubes
1 cup water, coconut water, or plant milk


Prepare the pudding: Combine all ingredients in a mason jar with lid. Give a shake and let sit in the fridge overnight.
Prepare the smoothie: Blend all ingredients in a high speed blender until smooth.
Layer with chia pudding in glasses and top with extra sliced berries and mint springs to serve.
