Gingerbread Mug Cake

It may feel a little premature, but we’re full-on in the leadup to the ho-ho holidays, which is as good as being in the midst of the official season, isn’t it? Days are shorter, nights are colder, and it’s a perfect time to fill your cup with coziness. If you’re like me, the warmth and cheer is all the merrier with the knowledge that holiday indulgence doesn’t actually have to be indulgent—you know what I mean. Healthy holiday baking is not only accessible, it’s utterly delectable, and can be plant-forward and sustainable to boot (Santa’s sunstainably-sourced boots, hehe).

Taking mere minutes to make and as customizable as can be, this single-serve gingerbread goodness is a hug in a mug. Warmly spiced, it’s also low in sugar and refined sugar-free, oil-free, and made with mild, nutty, nutrient-rich sprouted Spelt flour from One Degree Organic Foods. Whole-grain spelt is not only an excellent source of fiber, it also contains essential nutrients such as iron, magnesium, and zinc. Sprouting unlocks that stalwart nutrition, making it easier for the body to digest, absorb, and steadily utilize the energy.

I’ve been a fan of One Degree Organic Foods for years, and was thriled when they offered to send me some of their wholesome product. The compassionate company was founded by, and continues to be run by, a family of passionate, organic food advocates with a deep respect for sustainable farming and clean, nourishing foods. All One Degree Organic products are plant-based, made with only clean, organic ingredients to ensure you taste nature’s most nutrient-rich grains, seeds, sweeteners, and other earthy ingredients. ODO Flours are further always non-GMO and glyphosate-free. You can or enter the source code on your package to trace your meal and meet the farmers and producers behind each and every ingredient.

This mini cake is light, tender, and brimming naturally warm and earthy  spice, plus just a touch of pure maple syrup and blackstrap molasses. If you crave a little decadence, feel free to add more sweetener to taste. If you go with an extra splash of molasses, take added comfort from the hidden treasures in that dark viscuous syrup, to the strong tune of iron, plus manganese, copper, calcium, potassium, magnesium and other minerals. You can also switch the unsweetened applesauce with liquid coconut, olive, or vegetable oil, or top with a sprinkling of powdered sugar or a drizzle of chocolate or caramel. Do what suits your mood—this one’s just for you. Happy holidays-are-on-the-way days! xo

Enjoy this cozy hug in a mug!
