Dark Chocolate Dipped Moringa Pistachio Cookies

These crisp-tender cookies are toothsomely delicious on their own, but if you really want to elevate them, go for silky half-coat of chocolate (and maybe a sprinkling of chopped pistachios on top of that, too). These may not be the most classic or festive holiday cookies, but that’s part of their true beauty. They’re not holiday cookies—they’re anytime cookies that are a delectable holiday fit. I also think of them—and maybe this is just me overthinking through food and food gifts—as compassionate cookies. I’m not really sure why. It could be the leaner profile and rich nutrients packed inside, setting the stage for mindful enjoyment and offering care with cheer. Or maybe it’s just because everything I love has been inspiring a sense of compassion.

This holiday season, it seems everywhere I’m seeing highlights of loneliness and ache amid the joy. There is sparkle and magic for sure, but I’m more observant than ever of struggles big and small. While this heightened awareness has made that trademark feeling of merriment feel a little more elusive this year, I’m grateful for it, too. It helps me to reflect with balanced perspective, to take space from expectations and observe, welcome, and determine the realities brought by each day. I can’t bake away anyone’s hardships, but I can cook up some simple ways to offer quiet joy and gentleness and hopefully calm my own anxious heart with the same sentiment when needed.

Moringa Pistachio Cookies
Yield: approximately 14 cookies

¾ cup gluten-free flour of choice (we prefer a GF blend, or quinoa flour)
¾  cup almond flour
½ teaspoon baking soda

½ Cup pistachios (Raw, roasted-unsalted, or roasted and lightly salted will work)*
1 Tablespoon ORGANIC INDIA Moringa powder
 ¼ cup maple syrup
¼ cup olive or coconut oil
Approximately 1-3 tablespoons plant milk of choice, or as needed
½ Cup dark chocolate chips, optional
*Reduce to 1/3 Cup if desired, omitting the sprinkling over chocolate)

Preheat the oven to 350 F.
In a food processor, pulse pistachios until finely chopped but still nutty—pause to make sure the nuts aren’t becoming buttery.

Transfer 1/3 cup chopped pistachios to a mixing bowl, reserving the remainder for later.  Add flours, pistachios, ORGANIC INDIA Moringa powder, and baking soda to the bowl and stir well, making sure the Moringa powder is evenly distributed.

Add in the oil and maple syrup. Add one tablespoon of plant milk at a time as needed to form a soft dough. Roll into approximately 1-inch balls, sprinkling with a little extra flour if needed, and place on a baking sheet prepared with parchment or silpat. Flatten slightly with the back of a spoon or fork. Bake the cookies for 12 minutes or until they are becoming golden brown on the edges. Let cool.

While cookies are cooling, melt dark chocolate, if using--heat on High in a microwave safe bowl for 1 minute, or gently heat in a saucepan, stirring until smooth. Dip half of each cooled cookie in the melted chocolate. Sprinkle chocolate with reserved chopped pistachios. Let cool fully, and enjoy! 


*If desired, coarsely chop pistachios and combine with flours, Moringa, and baking soda in a bowl, stirring or whisking to thoroughly distribute Moringa powder.
